Emperor Specialty Foods Ltd was founded in 1986 to import and distribute premium gourmet foods, starting with fresh shiitake mushrooms. By 1995, the company began sourcing mushrooms from China and local regions, and by 1998, they were the first Canadian company to regularly import fresh mushrooms from China via ocean shipment.
