WHAT IS BILONA GHEE

Bilona Ghee has been in use in India since times ancient. This fragrant golden yellow clarified butter has been there in the standard Indian kitchen much before we took a desire to refined oils even before we started make use of vegetable oils for cooking. Called -Bilona' is used to churn out butter from the curd, and then the butter is cooked on a slow flame to make ghee. It is used for cooking, frying, as a topping to enhance taste and even for massages, facial and other skin use! Not just ancient Ayurvedic, but the modern dietician too extols the character and nutritional quality of ghee. The Bilona Ghee Process has 4 stages: Stage 1: Boiling A2 Milk First milk is save from cows or buffaloes and the A2 milk is boiled. This is done as milk was fresh and raw, and may be having contamination. Then this milk is endorsed to cool till it has just sufficiently passion for making curd. Stage 2: Putting Curd in milk When milk is cooled off to curd making degree, the complete of it including the malai (that is creamy layer) is poured into earthen pots. To convert the milk into curd, a spoon of curd or curd starter called jamawan is attach to it. Overnight the milk turns into curd. Stage 3: Churning of Curd Now comes to the actual Bilona Stage. The curd formed in earthy pots is poured in a bigger earthy or wooden pot in which we have the wooden Bilona with rope swaddle around it and the free ends are handheld to make the bilona return and forth in order to churn the curd clock-wise and anti-clockwise so as to make butter. The Bilona goes on added out butter from the curd, which is scooped out leaving the buttermilk. Stage 4: Separate Makkhan and buttermilk In the last stage, butter is changed into another pot and heated to make Ghee. Since the Vedic ages wood was used to make a fire for slowly heating up the butter to make the milk solids separate from ghee.
